Don’t forget iPad and Mac apps If Apple does add the ability for iPhone to run Mac apps on an external display, it would be comparatively easy to do the same on iPad. It’s not yet clear if. If your app takes advantage of App Store features, they will all be supported when running your iPad or iPhone app on a Mac. Users will have full access to any in-app purchases and subscriptions associated with your iPad or iPhone app when running on Mac.

I have now tried this approach with Zoom, I have used it with Webex and it works. I used it just today.
Plug your iPad into your Mac then open QuickTime Player. Select File > New Movie Recording than select the v next to the record button. From the drop list select your iPad, it should show up as an option. Now you can record away. I have included a screenshot so you can see the option.
